Remove our IRC channel (on libera.chat) from docs and CONTRIBUTING.md in favor of Zulip

As mentioned on Zulip, the docs still mention libera.chat. I noticed the same for CONTRIBUTING.md. We have moved over to Zulip, so we should update these to avoid losing people.
